Unconventional Cookies
Here’s a unique and sophisticated treat— olive oil cookies infused with the bold flavors of red wine & rosemary aromatics.
You can make cookies without a food processor!
You really don’t need to use your finest olive oil, but using extra virgin olive oil will make the cookies more flavorful than using "pure" or "light" olive oil.
Ingredients:
2½ cups flour
½ teaspoon baking powder
Pinch of salt
⅛ teaspoon freshly ground black pepper
1 teaspoon minced fresh rosemary or ½ teaspoon dried
¾ cup sugar
2 eggs
½ cup olive oil
¾ cup dry red wine, or a little more
Directions:
Preheat the oven to 375°F and mix together the dry ingredients their own bowl.
Next, beat 2 eggs with olive oil red wine.
Mix the dry ingredients with the wet mixture until well combined.
Drop spoonfuls of the dough onto a lightly oiled cookie sheet and bake for 12 to 15 minutes, or until lightly browned.
Allow the cookies to cool for a couple of minutes before transferring them to a rack.
