Spicy Stir-Fried Chicken

Guaranteed to make your lips tingle, this recipe uses red curry paste to make your chicken breast go from bland to inspired. Welcome back, let’s get cooking!
1 chicken breast
1 cup string beans (long)
4 Kaffir lime leaves
1.5 tbsp red curry paste
1.5 tbsp palm sugar
1 tsp fish sauce
2 tbsp oil
Prep:
Cut chicken into bite-sized pieces.
Cut beans into 1-2 inch pieces.
Cut lime leaves.
Cook:
Heat oil in a wok or large pan on high and once hot add the chicken and space it out in the pan to brown (approx 1 minute).
Add curry paste, palm sugar and leaves, stirring until the sugar melts.
Add beans lower the heat to medium and stir until cooked.
Plate and serve over Jasmine rice or mashed potato.
