How to make a proper salad dressing from ingredients you probably already have
Before we dive in, let’s examine the ingredients from your typical store-bought dressing:
SOYBEAN OIL
SUGAR
CANOLA OIL
XANTHAN GUM
POTASSIUM SORBATE
CALCIUM DISODIUM EDTA

What’s the point of a light, healthy salad when the dressing is riddled with industrial sludge?

INGREDIENTS
1/4 cup red wine vinegar
1 garlic clove, crushed
salt and freshly ground black pepper
1 tsp/5 g Dijon mustard
3/4 cup extra-virgin olive oil
EQUIPMENT
medium mixing bowl
fork or whisk
In the mixing bowl, combine the vinegar, garlic, and salt and pepper to taste. Let sit 30 minutes, then remove and discard the garlic. Add the mustard and slowly whisk in the oil, continuing to whisk until the mixture is emulsified.
Pro Tip: add a little honey to sweeten things up
