Chicken Hobo Packs
You can use this technique all year round - the grill’s hot coals, a campfire in the summer or even a fireplace in winter.
Did you know masonry fireplaces without an insert are safe for cooking and deliver amazing results?
As a rule of thumb you want to bury your chicken in the embers surrounding the fire, not directly under it.
If you don't have a fire, simply bake the packets on a rimmed baking sheet at 350°F for 40 minutes.
This recipe is for 6 servings but can be multiplied to serve a crowd, just remember to wrap only 2 thighs per packet for easy handling.
You can also add other vegetables to the packets like broccoli or cauliflower florets, sweet potato chunks, or cherry tomatoes.
Have ready:
1 lemon or lime, very thinly sliced
Combine in a large bowl and toss well:
6 garlic cloves, thinly sliced
⅓ cup chopped cilantro or parsley
¼ cup olive oil ‘
1 jalapeño or serrano pepper, seeded and minced
Remove the skin from:
6 bone-in chicken thighs
Sprinkle generously with:
Salt and black pepper
